Italian pizza is different from American pizza.   And there are as many kinds of Italian pizza as there are American pizzas.   It’s rarely a meal there.  Pizza is usually a snack, and in many cities, it’s bought by the slice and eaten standing up or on the go.

As a rule, Italians don’t make pizza at home, because the best pizzas are baked at extremely high temperatures, and most home ovens don’t get that hot.  So Italians eat pizza when they’re out and about.  In some places, it gets too hot to fire up the oven during the day, so pizzas are only made at night.

Americans tend to think bigger is better, so there’s a tendency here to load a pizza up with lots of pizza toppings, starting with the cheese.  But Italians use cheese pretty sparingly, often just placing five or six medallions of fresh mozzarella on the pizza dough.  Much of the pizza won’t have any cheese at all.

As far as the sauce goes, some Italian restaurants use a traditional marinara sauce and others just use crushed or diced San Marzano tomatoes.  Some herbs and garlic may or may not be sprinkled over the top.   The classic pizza margherita adds some fresh basil, but that’s it.

A white pizza isn’t necessarily white – it just doesn’t have tomatoes.  Usually the crust is brushed with olive oil that’s been infused with garlic.   Pepperoni is an American obsession that you won’t see often in Italy, unless you go to places that cater to Americans.  Italian sausage isn’t a staple either.

In many parts of Italy, you will see prosciutto or ham.  It’s an ingredient in a pizza capricciosa and a quattro stagioni or four seasons pizza.

Vegetables are popular pizza toppings in Italy, especially mushrooms, black olives, and artichokes. And arugula, radicchio, and other greens pair nicely with tomato.    Some pizza restaurants break an egg over the pizza before it goes in the oven.  The yolk will still be runny when the pizza is served. Although this sounds a little odd, it’s actually delicious.   Seafood is also used to top pizzas often.  Anchovies, shrimp, calamari, and shellfish predominate in coastal towns and in Venice, where seafood is in almost every dish.

If you travel in Italy, be sure to try the pizzas in several different places.  Some will have a thick, chewy crust.  Others have a thin, crispy base.  Either way, they’re delicious.

Enjoying Italian foods is one of the best parts of traveling in Italy.  Each region of the country has its own unique cuisine, which is usually based on the best local ingredients.

Most half-day classes include a visit to a lively, open-air food market.  Campo de Fiori in Rome is surrounded by shops selling wine, meats and cheeses, and olives oils and vinegars.  In Florence, the San Lorenzo market sells truffles and white asparagus in season.  And in Turin, Eataly has its own market, with greengrocers, fish mongers, butchers, and cheese shops on site.

Once the dishes are prepared, the students and instructor sit down at a communal table to enjoy a four-course meal, accompanied by good wine.  As a rule, there’s an appetizer, a pasta course, a meat dish, and a dessert such as tiramisu or panna cotta.  Meals are usually comprised of local specialties, and students leave with recipes for the dishes they prepared.

50 g butter

40 g plain flour

100 g finely grated Gruyere cheese

  • Melt the butter with the olive oil in a heavy-based saucepan and add the onions.
  • Cook over low heat, stirring until the onions are  golden brown and beginning to caramelize.
  • Add the garlic to the pan and stir continuously for 2 minutes.
  • Sprinkle the flour over the onions and stir until it’s blended in
  • Gradually blend in the wine, stirring continuously and bring to the boil.
  • Add the stock
  • Add the bay leaf and thyme and season with salt and pepper to taste
  • Cover the pan and simmer for 30 minutes. Remove the bay leaf.
  • Preheat the grill.
  • Toast the baguette slices, then ladle the soup into the bowls with a baguette slice on top. Sprinkle with the grated cheese
